APPLE PIE PIZZA

APPLE PIE PIZZA

Yield: 1 mini 6" pizza

Ingredients

For the dough:
5 tablespoons warm water (105-110 degrees)
½ teaspoon sugar
½ teaspoon active dry yeast
¾ cup all-purpose flour
¼ teaspoon salt
1 tablespoon olive oil, plus extra for cup

For the rest:
2 small Granny Smith apples
¼ cup + 2 tablespoons brown sugar, divided use
½ teaspoon cinnamon
3 tablespoons unsalted butter, divided use
2 tablespoons all-purpose flour
⅓ cup powdered sugar
1-2 teaspoons milk (or water)


DIRECTIONS :

1-First, make the dough: In a 2-cup measuring cup, combine the warm water, sugar and yeast. Stir to dissolve. Let sit for 5 minutes, or until foamy. If the yeast does not foam, it's dead--start over.

2-Next, add the flour and stir. Then, add the salt and olive oil. Stir with a fork until a shaggy dough forms. Remove the dough and knead it a few times on a floured surface. As soon as you start kneading, the dough will come together and lose all the stickiness. Knead for about 1 minute. The dough should be easy to work with, pliable, and not sticky. Grease the measuring cup with the extra oil, and plop the dough back in it. Turn the dough over once to coat it in oil, then let it rise in a warm place until doubled in bulk, about 1 hour. (see photo for reference).

3-Meanwhile, peal and dice the apple. Add the apple, ¼ cup of the brown sugar, cinnamon, and 1 tablespoon of the butter to a skillet over medium-high heat. Saute until the apples soften and have a slightly sticky sauce clinging to them. (you will see caramel threads as you stir).

4-Next, in a small bowl, combine the remaining 2 tablespoons of butter, flour, and remaining 2 tablespoons of brown sugar. Pinch it together using your fingers to make a crumble.

5-Preheat the oven to 400, and place a pizza stone in the oven (if you have one). Alternatively, you could use a baking sheet coated lightly with cornmeal.

6-Flour your hands, and remove the dough from the measuring cup. Lightly flour the counter and knead the dough for 1 minute. Then, pat the dough out into a circle. Pick up the dough (just like you see them do in pizzerias) and let it drape over your two fists. Slowly start stretching the dough out in a circular motion around the edges to a diameter of 6". Am I explaining this well? maybe I should have made a video. Sorry.

7-Once the oven is preheated, place the dough on the pizza stone (or cookie sheet) and bake for 5 minutes. Carefully open the oven door, add the apples and crumble on top of the dough, leaving a border for the crust. Press down any parts of the dough that have bubbled up.

8-Continue baking until the crust is golden brown, about 5-10 minutes longer, depending on your pizza stone or baking sheet.

9-Remove from oven and let cool slightly.

10-Mix together the powdered sugar and milk (or water), and drizzle over dough. Serve hot!



PIZZA GRILLED CHEESE SANDWICH

PIZZA GRILLED CHEESE SANDWICH

INGREDIENTS:


6 slices of bread (I used French bread)
3 tbsp butter spread
1 1/2 cups of shredded mozzarella cheese (I used low fat; you can also use slices of mozzarella)
21 slices of pepperoni (I used turkey pepperoni)
3/4 cup marinara sauce

DIRECTIONS:


1. Spread about 1/2 tbsp butter on one side of each slice of bread.

2. Spread 1/4 cup of cheese on three slices of bread, on top of un-buttered side. Spread 7 slices of pepperoni on top of cheese for each of the three slices . Spread 1/4 cup of marinara sauce on top of pepperoni for each of the three slices. Spread another 1/4 cup of cheese on top of the sauce. Place remaining slices of bread on top, to form sandwiches (with butter side facing up).

3. Place frying pan on stove and turn to medium heat. Once hot, carefully place one sandwich in the frying pan, cooking the bottom  buttered side until golden and toasty and the cheese is melty. Then carefully flip over and cook until other side is also toasty and cheese is melted. Repeat with remaining sandwiches. If cheese does not melt to your desired consistency, you can briefly microwave sandwich for about 10-15 seconds before eating.

Ingredients


2pouches (7.5 oz each) Bisquick Complete buttermilk biscuit mix 
1 cup water
1 jar (14 oz) pizza sauce
1 package (8 oz) sliced pepperoni
2 cups shredded mozzarella cheese (8 oz)

Directions


1- Heat oven to 375°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. In medium bowl, stir Bisquick mix and water until soft dough forms. Drop half of dough by spoonfuls evenly in bottom of baking dish (dough will not completely cover bottom of dish).

2 -Drizzle about 1 cup pizza sauce over dough. Arrange 1/2 of the pepperoni slices evenly over sauce. Top with 1 cup of the cheese. Repeat layers with remaining dough, pizza sauce, pepperoni and cheese.

3 -Bake 20 to 25 minutes or until golden brown. Cut into squares to serve.

Ingredients


1can (7.5 oz) Pillsbury™ refrigerated buttermilk biscuits (from 4-can pack)
1cup pizza sauce
1cup shredded mozzarella cheese or pizza cheese blend (4 oz)
Additional pizza sauce, if desired

Directions :

1-Heat oven to 375°F. Spray 8-inch square (2-quart) glass baking dish with cooking spray. Separate dough into 10 biscuits. Cut each into quarters; place in medium bowl. Stir in 1 cup pizza sauce to coat. Spoon biscuit mixture evenly into dish.

2-Bake 15 to 20 minutes or until light golden brown and center biscuits are no longer doughy.

3-Sprinkle with cheese; bake 5 minutes longer
or until cheese is melted. Cut into squares; serve warm with additional pizza sauce for dipping.
